The difference in cooking experience between mise en place and preparation-as-you-go is most apparent in recipes with time-sensitive steps: a stir-fry that requires ingredients to be added in rapid sequence at high heat is either smooth and well-executed (with mise en place) or a frantic scramble of chopping while something burns (without it). Understanding Recipe Language: The Terms That Mean Specific Things
Recipe language uses specific terms with specific meanings that affect outcomes when misunderstood.
